I want to share with you the best pesto recipe on the planet. Thanks to Sunset magazine for publishing this recipe a few years ago. It is packed with flavor, not too oily and very versatile.
Basil Pesto
- 2 cups packed basil
- 3 garlic cloves
- 1/4 c. olive oil
- zest and juice of 1/2 lemon
- 1/2 c. grated pecorino romano
- 1/3 c. toasted walnuts
- salt and pepper to taste
Put all of these ingredients in a food processor and whirl.
I have used this pesto as a sandwich spread, topping for broiled fish and sauce for pasta. It freezes well. You must try this recipe and I guarantee that you will love it. Enjoy!
